Popsicles!

My midwifes want me getting more fat in my diet and have suggested I eat more coconut and avocado. Pregnancy has created a lot of food aversions; especially with cooked foods. I have come up with a solution. Coconut smoothies and Popsicles. The following recipe can be frozen as Popsicles or be an extremely rich smoothie.

makes 8 Popsicles or 2 very rich and filling smoothies

ingredients

  • 1 14 fl. oz. can coconut milk
  • 1 handful blueberries (i used fresh frozen would work if they are not in season)
  • 1 handful strawberries (i used frozen)
  • 2 heaping tbs orange juice concentrate more or less to taste
  • 1 tbs agave nectar
  • 2 tbs protein powder (can be left out if you don’t need extra protein)

dump everything into a blender and puree until very smooth (or make it chunky if you prefer)

for Popsicles poor into your Popsicle freezing container and freeze or pour into glasses and drink. my Popsicle mold only makes 4 and that took about half my smoothie so i poured the other half into a glass to drink but it is to rich for me and i will probably try freezing it in another container.
